Echor Niramish (Green Jack fruit Curry)



















Echor is the most popular vegetables in our region in the summer. Unripe Jack Fruit is known as Echor in the Indian sub continent and in Bangladesh both unripe & ripe are very popular. It can cook many ways like Niramish/curry with various vegetables, meat, beans, kofta, cutlet and etc. But Niramish/curry is the most popular. here is the recipe for you. 

Echor Niramish Recipe: 


Preparation time: 30 mins
Cook Time: 30-40 mins
Serves: 6-8 persons 

Ingredients: 


 Echor ( green jack fruit) - 1/2 kg (cut into pieces)
Onion - 3 ( thinly chopped)
potato - 2 ( cut into pieces)
Tomato -2 (cut into pieces)
Ginger paste - 2 tsp
Garlic paste - 1 tsp
Cumin paste - 1 tsp
coriander powder - 1 tsp
Bay leaves - 3 leaves
Red chili whole - 3 
Clove - 4 pcs
Cinnamon -  2 stick
Cardamom - 4 or 5
Turmeric powder- 1 tsp
Red chili powder - 1 tsp
Salt - According to taste
Water - 5 cups

Cooking Instruction:

  1. peel the jack fruit,Cut green jack fruit and wash it properly.( before cutting jack fruit stir mustard oil on your hand if you do this jack fruits gums does not attach in your hand) 
  2. Heat oil in a large pan, add onion ,all spice, stir it.
  3. Then add jack fruit , potato and tomato cooked around 5 mins.
  4. After that add salt as per you need.
  5. add 5 cups water for boil the vegetables.
  6. Cover the pan with a lid and cook 20 mins.
  7. when its gravy will be semi dry its ready for serve.
  8. For garnishing you can use coriander leaves. 

Serves with Hot rice or bread and enjoy this delicious food item in launch or dinner.






Mixed Vegetables With Chicken 

(Chinese Style) :











Mixed vegetable with chicken Recipe:

Preparation time - 15 mins
Cook time - 15 min
Serves person - 4

Ingredients:


Chicken cubes - 1 cup ( breast pieces )
Green papaya - 1/ cup ( thin slice )
Carrot - 1/2 cup ( thin slice)
Cabbage - 1/2 cup
Long bean ( borboti) - 1/2 cup ( 1 inch pieces )
Capsicum - 1/2 cup Cubed
Onion -  1/2 cup Divided layer by layer
Green chilies - 5/6  pieces split in half
Chicken powder - 2 tea spoon
Corn flour - 1 table spoon
Liquid milk - 3/4th cup
Ginger paste - 1/2 table spoon
tasting salt - 1 tea spoon
Salt to taste (if needed)
Ghee - 1 table spoon
Oil

You can use other veggies like cauliflower, mushroom, broccoli too.

Procedure:


1.You boil the papaya, carrot, cabbage, long bean with little water and salt until just its half boil. Remember don't over boil, if you over boil it, it will be mushy. Without capsicum and bottle gourd after 5 mins cooking you should add capsicum. Cook around 3 mins and stop flame.

2. Combine ginger with chicken. Take a pan, heat oil and give the chicken. Fry until its cook. Add the chicken powder. Now add boiled veggies and capsicum. Add little amount of salt and tasting salt.

3. Mix the corn flour in milk and add into the veggies. Add the onion and green chilies. The gravy will be thick. Turn off the flame and pour the ghee over the veggies.
