Mango Kulfi 
















This is the MANGO TIME in the country. Summer & Mango are like Brothers. For the next few months, people of our country will eat mangoes, sleep mangoes & drink mangoes. For that, this recepie is for those people who love to eat mangoes throut the summer. 

Preparation Time: 10 Mins. 
Frezzing Time : 6 or 8 hours. 
Serves: 3-4 Persons. 

Ingredients: 


  1. 2.5 cups of cow milk (powder milk in case). If you can have Almond milk, the taste will be more delicious. 
  2. 2.5 cups ripe mango puree. 
  3. Sugar depends on the sweetness of the mangoes. Normally 1/2 cup. 
  4. 4-5 green cardamom(elach). 
  5. Saffron/Kesar of a pinch. 
  6. Soaked, peeled & sliced pistachios 12-15 pieces. 
  7. Khoya/Mawa 2-3 tbsp. 
  8. 2 tbsp of corn flower dissolved in 3 tbsp of almond milk or regular milk. 

Cooking Instruction: 

  1. First take saffron & milk in a pan to heat on a low flame for about 15-16 mins. Don't boil them, just a gentle heat. 
  2. Add sugar & stir them till dissolve. 
  3. Dissolve the cornflower in milk to make paste & add them with the milk and keep them stiring in a low flame till the mixture thicken. switch off the fire. 
  4. Add khoya/mawa & stir them till cool. 
  5. Add mango puree & chopped pistachios and mix them properly. 
  6. Pour the kulfi in ice cream tray. Freeze them for 6-8 hours. 
  7. Serve them with saffron, pistashios and cardamom powder topping.





Mixed Fruits Custard:



















Mixed fruits recipe:


Preparation time: 10 mins
Cook time : 15 mins
Serves person : 2 person


Ingredients :



  1. Regular milk - 1 liter
  2. Any seasonal fruits -  2 cups
  3. Sugar - 1.5 cups
  4. Condense milk - 1/2 cup
  5.  Custard powder - 3 tbsp
  6. Almond slice - 2 tbsp
  7. Vanilla essence - 1 tsp


Method:



  1. Boil the milk properly, stop boiling when its reduce some portion of milk.
  2. Add sugar and stir it properly.
  3. Then add condense milk.
  4. Stop stove and add custard power very slowly,stir thoroughly at least 2 or 3 minutes. 
  5. If you don't stop stove custard powder makes lumps into the milk.
  6. Add vanilla essence, and chilled long time.
  7. Then add finely chopped seasonal fruits and mix it well.
  8. Garnish by Almond slice.
